Raw chocolate pistachio hearts
Ingredients: 1/2c raw walnuts 6 Medjool dates, pits removed 4 tbsp cacao powder 1 tbsp maple syrup 1/4c pistachio, roughly chopped
Directions:Soak walnuts and dates in cold water for an hour. In a food processor, add walnuts and pulse to coarse crumbs. Add dates, cacao powder and maple syrup then process to a thick paste. If the mixture isn’t holding together, add 1 to 2 tsp of water. Transfer everything to a small bowl and fold in pistachios. Pat the mixture into a small disc and place between two sheets of baking paper. Using a rolling pin (or your hands), flatten to a 1cm thickness and create shapes using cookie cutters. Alternatively, this recipe would work great rolled into truffles and coated in cacao powder.
