Blueberry cheesecake for one
Ingredients for crust:2 tbsp almond meal1 tbsp vanilla whey protein1 tbsp melted coconut oilPinch of saltSweetener, to taste
Ingredients for cheesecake:1/2c Chobani Greek yogurt1 light Laughing Cow cheese wedge (or 17g light cream cheese)2 tsp coconut flour1 tsp vanilla whey protein1/4 tsp vanilla extractSweetener, to tasteHandful of frozen blueberries
Directions:Preheat oven to 180c. Combine all ingredients for crust - this should resemble coarse bread crumbs, so feel free to add more coconut oil if it seems dry. Press into the bottom of a mini springform pan and bake for around 7 minutes or until lightly golden. Reduce oven heat to 160c. Mix yogurt and cheese until smooth. Sift in dry ingredients and add vanilla, then mix well. Pour batter onto crust and bake for 20 to 25 minutes - the cheesecake is done when the centre has slightly risen. Let cheesecake sit for a few minutes before removing from pan.In a microwave-safe bowl, microwave frozen blueberries with a little sweetener for 40 seconds. Top onto cheesecake and serve immediately. You can also fold the blueberries into the cheesecake batter (before baking) if you wish to skip this step.
