Raw mint chocolate brownie bites
Makes 12 servingsIngredients:1/2c raw unsalted cashews 1/2c raw unsalted walnuts 7 Medjool dates, pits removed 1/2c - 3/4c fresh mint leaves, packed 1/4 tsp vanilla bean powder 1/4c raw cacao powder (+ more for dusting) Pinch of salt 1 to 2 tsp water (if needed)
Directions: In a food processor, blend cashews and walnuts to a rough crumble. Add Medjool dates and mint leaves, then process until a thick paste forms. Blend in vanilla, cacao and salt. If the mixture is too thick, add water one teaspoon at a time and mix well. Line a mini baking tray with cling wrap and tightly press mixture into the tray. Cover with another sheet of cling wrap and refrigerate overnight. Remove from fridge 10 minutes before serving, cut into bite-sized pieces and dust with cacao powder.
